Ok- as you might have noticed, I have a bit of a sweet tooth, to put it mildly. (And yes, I still have all of my real teeth!) So this is a spot dedicated to salty stuff! What have you got?

Southwestern Wheat Salad

3/4 cup uncooked wheat
1 sm. can diced green chiles
1 cup diced red bell pepper
1 cup diced jicama
1/4 cup diced red onion
1/4 cup minced fresh cilantro
1 1/2 Tbsp. olive oil
2 garlic cloves, minced
3 Tbsp. lime juice
1 can cannery black beans

Put wheat in bowl, cover with water about 2 inches above wheat. Cover and let stand 8 hours or overnight. Drain and put wheat in saucepan. Bring to boil, then reduce heat and simmer uncovered for about an hour or until tender.
Drain and cool. Mix wheat and other ingredients in a bowl. Set aside to "marinate" for about an hour. Serve chilled or at room temperature.

Chunky Salsa!

1 can cannery tomatoes, with liquid and chopped in blender
1/2 jalapeno pepper, minced
1/2 bell pepper, diced
1/2 med. white onion, diced
2 cloves garlic, crushed
1/2 tomato, diced
1/4 c. cilantro

Mix together and let sit for 1 hour before serving so that the flavors blend.

Pink Chili

Cooking spray
1/2 cup shallots
3 garlic cloves, minced
1/2 tsp. dried oregano
1/2 tsp. crushed coriander seeds
1/4 tsp. ground cumin
1 can cannery tomatoes, chopped
1 can (11 oz.)tomatillos, drained and chopped
1 (4 oz.) can diced green chiles
1 cup chicken broth
2 cans cannery pink beans
1 can cannery chicken (reserve broth)
3 Tbsp. lime juice
1/4 tsp. black pepper

Saute shallots and garlic in hot frying pan coated with spray until tender. Stir in oregano, coriander, cumin, tomatoes, chicken broth and chicken broth reserved from canned chicken, tomatillos and green chiles. Bring to a boil then reduce heat and simmer for 20 minutes. Add chicken and beans, cook for 5 minutes or until heated through. Stir in lime juice and pepper. Ladle into bowls and top with cheese.

Korean food is very salty. I believe they use kosher salt in their salads. Very delicious. Some great alternatives to salt- soy sauce, fish sauce, all spice. This is a salty stew: When my mother in law cooks stew (she is from the former Soviet Union) she makes the base from a tablespoon of tomato paste, tablespoon of salt and a tablespoon of oil. Fry some chopped onion. Add diced meat and pour water to about a half of the pot. Add vegetables, simmer for an hour and a half. Sorry the recipe is written weird. My mother in law doesn't use traditional recipes.

That sounds good! I had no idea Korean food was so salty- I don't think I've had it before. Do you have any Korean recipes?
