The one thing I did with the cherries was to make a chocolate cake in a "flan" pan- one of those fluted edge pans that when the cake is baked and turned over, there is a raised egde around the cake to hold in filling. Then I filled it with a cream cheese-cheesecake like mixture and topped it with the cherries that I had thickened by cooking with sugar and cornstarch. It was good- kind of like a Black Forest cake.
What about adding it to ice cream to make a kind of Cherry Garcia?
