
Mock Lemon Pie! AKA- Vinegar Pie! Thanks to Sheila for this recipe! 1 1/2 c. water 1/4cup +1 Tbsp. vinegar 1/4 tsp. salt 1 cup sugar Mix the above ingredients in a saucepan until it makes a paste. The add to the paste: 1/2 cup flour mixed with 1/2 cup water Cook until clear, then remove from heat. Beat 2 egg yolks and stir them into the hot mixture. Return to stove and cook for 5 minutes. Add: 1 tsp. lemon extract. Pour into baked pie shell and chill. You can add meringue or sprinkle with nutmeg.
