Refried Bean Fudge!

1 cup dry pack refried bean flakes, reconsituted

1/4 cup milk
6 oz. cocoa powder
2 lbs. powdered sugar
1 Tbsp. vanilla
6 Tbsp. butter
Combine beans and milk and stir. Add vanilla, melted butter and cocoa powder. Stir well and add powdered sugar a little at a time. Stir again. Knead well and press into a buttered 9x13 pan. Chill 1-2 hours. You can replace the refried beans with 1 cup cooked and mashed pinto beans. It seems to have the best consistency if kept in the freezer- it won't freeze hard. BIG HIT AT THE CANNERY BOOTH! Try adding marshmallows and nuts to make Rocky Road.

I gotta tell ya- I fed this to some family members the other day without telling them what it was made of, and they LOVED it. They couldn't believe it was refried beans when I told them.

Speaking of Chocolate- my neighbor gave me this recipe. I thought I'd include it because most people keep cake mixes in their storage and it's EASY and YUMMY and LOW IN FAT!
Easy Chocolate Chip Pumpkin Muffins!

1 sm. can pumpkin
1 spice cake mix, dry
1 cup chocolate chips

Mix together the can of pumpkin and the dry cake mix. AT FIRST THIS WILL LOOK RIDICULOUSLY DRY AND NOT WORTH CONTINUING, BUT KEEP STIRRING! It will eventually moisten into a thick batter. Fold in chocolate chips and spoon into muffin tins. Bake about 15 minutes- maybe a bit more or less- until tops of muffins are set.
